Let’s be honest—coffee can feel complicated. When I first entered the speciality coffee scene, I thought all beans were pretty much the same. Turns out, I was way off! If you’re anything like me, you might have wondered why some coffees taste bright and zesty, while others are rich and bold. The secret? It’s all about the roast.

Whether you’re a coffee veteran or just dipping your toes in, understanding roast levels can totally change your coffee game. So, let’s chat about what roast levels actually mean—and why you might care.

☕ What Are Roast Levels?

Roast level is basically how long and how hot the beans are roasted. It’s what turns those green, grassy-smelling beans into the fragrant, brown ones we love. The roast can make a huge difference in flavour, aroma, and even how your coffee feels in your mouth.

You’ll usually hear people talk about three main roast levels: light, medium, and dark. Sure, there are all sorts of in-betweens (like “medium-dark” or “light-medium”), but let’s keep it simple for now.

🔅 Light Roast

Taste Profile:
Bright, crisp acidity
Fruity or floral notes
Lighter almost tea-like body

Who Loves It:
If you’re curious about where your coffee comes from and want to taste those unique, natural flavours, light roast is a great pick. I remember the first time I tried a light roast from Ethiopia—suddenly, I could taste hints of blueberry and orange! It was a total surprise.

Brew Tip:
Try a pour-over or AeroPress to let those delicate notes shine. That’s what I do when I want to enjoy a light roast profile.

🔆 Medium Roast

Taste Profile:
Balanced body and acidity
Hints of chocolate, caramel, maybe a little cocoa
Smooth and easygoing

Who Loves It:
Honestly, this is the “Goldilocks” roast—just right for most people. If you want a coffee that’s not too sharp but not too heavy, medium roast is your friend. Around here, it’s what we brew most often for our regulars in our coffee house.

Brew Tip:
Works for pretty much any method—drip, French press, espresso. I usually reach for a medium roast when I’m craving a fuller bodied richer tasting coffee like an espresso. My go to is a short black.

🔥 Dark Roast

Taste Profile:
Bold, toasty, bittersweet and sometimes smoky
Low acidity
Full-bodied, with notes like dark chocolate or spice

Who Loves It:
If you like your coffee strong and punchy, dark roast is the way to go. My dad swears by it—he says it’s the only thing that wakes him up on a rainy Lincoln morning!

Brew Tip:
Espresso or stovetop Moka pots really bring out those rich, smoky flavours. I would suggest using a French press for a big, bold cup, for those who love a classical coffee experience.
