About the producer

Dulima was created in 2009 to honour the coffee profile of the central and south Huila region. Around its mountains, outstanding coffees are grown, which are carefully selected through a rigorous sensory analysis to guarantee the profile consistency and quality.

The dedication of thousands of families producing coffee in the Huila region, whose average size of coffee plots is inferior to two hectares. Huila coffee represents 18% of Colombian total coffee production and it’s always in high demand and preferred by customers for its fine blends or as single-origin for its incomparable balance of acidity and sweetness.

Huila has deep roots in coffee production, it was the first historical department in Colombia to start producing coffee. As a result, Huila is well known for its outstanding coffee quality, farmers take great pride in growing their coffees. In recent years Huila farmers are now embracing new processing techniques giving even more complexity to their coffees. Usually, coffee from Huila is preferred as a single origin as it offers acidity and sweetness achieving perfect balance.

The Huilan landscape is dominated by volcanos and mountains, providing a rich terroir of high altitude and fertile soils and offering a wide range of ecosystems where coffee can be grown. There are producing farms ranging from 1500 m.a.s.l. up to 2.300 m.a.s.l., conferring great attributes to the cup profile such as bright acidity and characteristic sweet notes.

Brewing Filter or Espresso

Dose 18g coffee, water 295ml. Using a v60 we suggest using 18g of coffee to 255ml of water (95C) for a total brew time of 3:15 – 3:30 minutes. Use soft or filtered water for the best results. For Espresso we suggest dosing 18.5g of ground coffee & extracting 36-38g of liquid espresso in 27-30 seconds. Use soft or filtered water for the best results.
